I love hummus! What a great line to intro with, right? But really, if I could eat hummus every single day, I would.
While I do not call this an authentic version by any means, it gets me by and curbs any hummus craving I have with just a few simple ingredients that I almost always have in my house.
INGREDIENTS
1 cup garbanzo beans
4 unpeeled garlic cloves
1/3 cup fresh lemon juice
2/3 cup tahini
1/4 cup water with ice
1/4 tsp cumin
1 tsp salt
INGREDIENTS FOR TOPPING/EXTRA FLAVOR
fresh lemon juice, olive oil, paprika, cumin, flat leaf parsley, pine nuts
DIRECTIONS
Pulse garlic and lemon juice in a processor then let it sit for 10 minutes
Strain and keep the liquid, discard any solid pieces
Blend the lemon garlic liquid with the tahini. Create a smooth texture by adding in your cold water 1 tbsp at a time while blending in between.
Add chickpeas, cumin, salt and blend until smooth (adding more lemon juice or water as necessary for smoothness and flavor). At this point I taste and decide what I will add more of (salt, cumin, lemon, tahini) until done.
