This recipe has become a staple in our household. Why? It's easy, filling, and can be made into tacos, a warm salad, or a zesty bowl. Honestly, because of this recipe, I've probably eaten more cauliflower in the past 3 months than I have in my entire life (I know, I know..).

INGREDIENTS
1 cauliflower head cut up
1-2 sweet potatoes cut up small chunks (optional if you have them!)
Juice of one lime
2 tsp chili powder
1 tsp cumin powder
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp salt
DIRECTIONS
Preheat oven to 400 F and line a sheet pan (if you want) with foil.
Add cauliflower and sweet potato chunks to a large bowl (the larger the better!). Squeeze lime juice all over to coat.
Add in all the spices and toss.
Place on the sheet pan and roast for 25 minutes! Edges should be nice and crispy

As the main filling in a taco (with avocado and other fixings!), As the main component of a salad (get those veggies!), As the zesty filler of a bowl with rice or your preferred grain.
